Butcher Block (aka end grain cutting boards) – This style of cutting board is the premiere style of construction. The end of the grain structure faces up therefor as your knife moves across it the blade passes between the individual wood fibers, leaving less knife marks and maintaining the edge of your blades for longer. This type of cutting board is the best choice for someone who cooks heavily and uses premium knives. Serrated knives will show cut marks in this style of cutting board, but not as badly as the above two. This particular style will last a lifetime if properly maintained. My personal butcher block is now 20 years old and shows very little wear and tear. A cutting board of this type will most likely never need to be resurfaced.

My work versus the competition - Many competitors do not focus on the proper construction and longevity of cutting boards. They assume that they will be hung on the wall more as a decoration than a usable piece. As such, you will find most competitors using woods unsuitable to cutting boards such as pine and poplar. My cutting boards are all constructed of hardwoods higher than 950 on the Janka scale of hardness. Look at a cutting board made of pine and you will likely see indentations from simply being shuffled around. While all wood will indent, pine is simply too soft for any kind of daily use. In addition, many competitors use chemical based stains and finishes in their pieces. These finishes are not approved by the FDA to be food safe. The finishes used on my hand made cutting boards are FDA approved food safe and the final wax coatings are made in house using organic bee’s wax. The colors in my cutting boards are 100% natural and are not altered with any chemical stains, paints or dyes. Some use chalk paint to create artwork on their boards. This paint is not safe to ingest and, like all artificial chemicals, is especially dangerous for children and the elderly.

Given the nature of wood, color and grain will vary. The final dimensions of the cutting board may vary slightly.
